Corn Relish

Low-Fat! Prep: 10 min; Cook: 5 min; Chill: 4 hr

Brats, hot dogs and hamburgers are favorites with this relish.


   _ cups frozen corn, thawed or 1 can (15 1/4 ounces) whole kernel corn, drained
   _ tablespoons chopped green bell peppers
   _ tablespoon finely chopped onions
   _ (2-ounce) jar diced pimientos, drained
   ___ cup sugar
   ___ cup cider vinegar or white vinegar
   ___ teaspoon celery seed
   ___ teaspoon salt
   ___ teaspoon mustard seeds
   ___ teaspoon red pepper sauce


1. Mix corn, bell pepper, onion and pimientos in medium heatproof glass or plastic bowl.

2. Heat remaining ingredients to boiling in 1-quart saucepan, stirring occasionally. Boil 2 minutes. Pour over corn mixture; stir.

3. Cover and refrigerate at least 4 hours to blend flavors but no longer than 5 days.
