Creamy Herb-Mushroom Sauce

So rich, so creamy, so luscious - so good ladled over chicken, beef or pork.


   ___ cup butter or stick margarine
   _ tablespoon finely chopped shallots
   _ cup thinly sliced mushrooms (about 3 ounces)
   _ tablespoon all-purpose flour
   _ tablespoon chopped fresh or 1 tsp dried thyme leaves
   _ tablespoon chopped fresh parsley or 1 tsp parsley flakes
   ___ cup half and half
   _ tablespoon dry white wine, if desired


1. Melt butter in 2-quart saucepan over medium heat. Cook shallots and mushrooms in butter, stirring occasionally, until tender.

2. Stir in flour, thyme and parsley. Cook, stirring constantly, until slightly thickened.

3. Gradually stir in half-and-half and wine until smooth. Cook, stirring constantly, until thickened. Serve immediately.
