Savory Butters

Top grilled or broiled beef or fish steaks, pork chops or chicken breasts with these easy butters, or toss with hot pasta, rice or vegetables. And of course, they are also great as a spread for bread.


   Garlic Butter:
   ___ cup softened butter
   _ to 2 cloves garlic, finely chopped or 1/4 to 1/2 tsp garlic powder

Beat ingredients for one of the flavor variations, below. If desired, chill about 1 hour to blend flavors.

Garlic Butter: 1/2 cup softened butter, 1 to 2 cloves garlic, finely chopped, or 1/4 to 1/2 teaspoon garlic powder.

Herb Butter: 1/2 cup softened butter, 2 tablespoons to 1/4 cup chopped fresh or 1 to 2 teaspoons dried herb leaves (basil, chives, oregano, savory, tarragon or thyme), 2 teaspoons lemon juice and 1/2 teaspoon salt.

Italian Parmesan Butter: 1/2 cup softened butter, 2 tablespoons grated Parmesan cheese and 1/2 teaspoon Italian seasoning.

lemon-pepper Butter: 1/2 cup softened butter, 2 tablespoons finely shredded lemon peel, 1 teaspoon lemon juice and 1/8 to 1/4 teaspoon pepper.

Sesame Butter: 1/2 cup softened butter, 2 tablespoons toasted sesame seed (page 177), 2 teaspoons Worcestershire sauce and 1 teaspoon garlic salt.
