Starlight Mint Surprise Cookies

The idea for this cookie came to the originator when she was given a package of mint-flavored chocolate candies. Brown sugar cookie dough is pressed around each candy so each cookie has a surprise chocolate mint in the center.


   1 cup sugar
   1/2 cup firmly packed brown sugar
   3/4 cup margarine or butter, softened
   2 tablespoons water
   1 teaspoon vanilla extract
   2 eggs
   3 cups all-purpose flour
   1 teaspoon baking soda
   1/2 teaspoon salt
   2 (6-ounce) packages solid mint candy chocolate wafers
   60 walnuts halves or pieces


In large bowl, combine sugar, brown sugar, margarine, water, vanilla and eggs; blend well. In medium bowl, combine flour, baking soda and salt; mix well. Add to sugar mixture; mix at low speed until well blended. Cover with plastic wrap; refrigerate at least 2 hours for easier handling.

Heat oven to 375°F. Using about 1 tablespoon dough, press dough around each candy wafer to cover completely. Place 2 inches apart on ungreased cookie sheets. Top each with walnut half.

Bake at 375°F. for 7 to 9 minutes or until light golden brown. Immediately remove from cookie sheets.
