Bake-Off® Contest 29, 1980
Reminiscent of a popular candy bar, these are sure to be a favorite with everyone. Our microwave directions allow the bars to be made in a smaller pan for smaller households.
CRUST
1 1/2 cups all-purpose flour
2/3 cup firmly packed brown sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup margarine or butter, softened
1 teaspoon vanilla extract
2 eggs yolks
3 cups miniature marshmallows
TOPPING
2/3 cup corn syrup
1/4 cup margarine or butter
2 teaspoons vanilla extract
1 (10-ounce) bag peanut butter chips
2 cups crispy rice cereal
2 cups salted peanuts
Heat oven to 350°F. In large bowl, combine all crust ingredients except marshmallows at low speed until crumbly. Press firmly into bottom of ungreased 13 x 9-inch pan.
Bake at 350°F. for 12 to 15 minutes or until light golden brown. Remove from oven. Immediately sprinkle with marshmallows. Return to oven and bake an additional 1 to 2 minutes or until marshmallows just begin to puff. Cool while preparing topping.
In large saucepan, combine all topping ingredients except cereal and peanuts. Heat just until chips are melted and mixture is smooth, stirring constantly. Remove from
heat; stir in cereal and peanuts. Immediately spoon warm topping over marshmallows; spread to cover. Refrigerate until firm. Cut into bars.
MICROWAVE DIRECTIONS: Halve the recipe. Combine all crust ingredients except marshmallows as directed. Press in bottom of ungreased 8-inch square (1 1/2-quart) microwave-safe dish. Microwave on HIGH for 3 1/2 to 4 1/2 minutes or until crust looks dry, rotating dish 1/2 turn halfway through cooking. Immediately sprinkle marshmallows over top. Microwave on HIGH for 1 to 1 1/2 minutes or until marshmallows begin to puff. Cool while preparing topping.
In 4-cup microwave-safe measuring cup, combine all topping ingredients except cereal and peanuts. Microwave on HIGH for 1 to 2 minutes or until chips are melted, stirring once halfway through cooking. Stir until smooth. Continue as directed above.
