Spicy Barbecued Chicken |

Prep Time: 20 minutes (ready in 1 hour) - Yield: 4 servings
2 1/2 to 3 pounds quartered frying chicken
1/2 cup chopped onions
1 garlic clove, minced
1 (8-ounce) can tomato sauce
3 tablespoons brown sugar
2 teaspoons chili powder
1/3 cup vinegar
2 to 3 drops hot pepper sauce
1 tomato, peeled, seeded and chopped
1. Heat oven to 350°F. Place chicken in large saucepan or Dutch oven. Add water to cover. Bring to a boil. Reduce heat to low; cover and simmer 10 minutes. Drain.
2. Meanwhile, in small saucepan, combine all remaining ingredients; mix well. Bring to a boil. Reduce heat to low; simmer 5 minutes.
3. Arrange chicken in ungreased 13x9-inch pan. Brush chicken with 1/2 cup sauce. Bake at 350°F. for 30 to 40 minutes or until chicken is fork-tender and juices run clear, basting occasionally with sauce. Bring any remaining sauce to a boil; serve with chicken.
