If you don’t have leftover cooked chicken when a recipe calls for cubed, cooked chicken, place four boneless skinless chicken breast halves (1 1/2 to 2 pounds) in a 2-quart microwave-safe dish; cover. Microwave on high for 8 to 10 minutes or until chicken is fork-tender and no longer pink in center. Halfway through cooking, rearrange and turn the chicken pieces. Cool; cut into cubes. Yields 2 1/2 to 3 cups.
