Heat rice, water, and salt to boiling, stirring twice; reduce heat. Cover and simmer for 45 to 60 minutes. After 45 minutes, remove lid and fluff with a fork and taste to see if it's done. The rice should have a slightly firm texture and be nutty in taste. If it is hard to chew, it is underdone and should be cooked 5 to 15 minutes longer. If it falls apart and has a mushy texture, it is overdone.
