In a medium bowl, beat egg whites until stiff. In a blender, beat cottage cheese and yolk until smooth. Add milk, flour, and vanilla and blend well. Pour into a separate bowl. Fold in egg whites. Cook on a nonstick cooking-sprayed pan until top is bubbly. Turn and cook until lightly browned. Serve with fruit rolled inside and Fruit Syrup or All Fruit Jam on top. Nonfat, fruit-juice-sweetened yogurt is also delicious on the fruit inside the Blintzes.
