3 oz beef round steak lean or skinless turkey, chicken
1/2 cup water
1/2 envelope taco seasoning mix
1/2 clove garlic diced
1 onion
2 green bell peppers
1 red bell pepper
2 flour tortillas or whole wheat
1 cup lettuce shredded
1 cup tomatoes diced
2 tablespoons mozzarella cheese part-skim, grated
Pan-fry the meat until brown. Then add 1/2 cup water and steam for a few minutes. While steaming, add diced garlic and taco mix for flavor.
Slice vegetables into 1/2-inch wedges. When meat is done, add vegetables and stir-fry until tender.
Roll mixture inside soft whole-wheat tortillas and garnish with shredded lettuce, tomato, and a tablespoon of grated cheese.
