Follow pancake batter recipe or directions on whole-wheat pancake mix. Spray Belgian waffle iron or regular waffle iron thoroughly (between each waffle removal) with nonstick cooking spray. Pour enough batter in center of preheated iron to spread over two-thirds of the iron. Close and let cook to desired doneness. Open and remove with the help of a fork. Respray and repeat. Top lightly with real maple syrup, fruit sauce, or fresh fruit and vanilla yogurt.
