1 1/4 cups whole wheat flour
1 1/2 cups unbleached flour, white
1/4 cup wheat germ
1/4 cup brown sugar
1/2 teaspoon salt
2 teaspoons baking soda
2 teaspoons baking powder, double-acting
1 1/2 cups buttermilk, low-fat
2 tablespoons margarine, diet
1/2 cup currants or raisins
I also serve this at dinner, and it is a big hit.
1. Preheat oven to 375ºF.
2. In a bowl, stir together all dry ingredients.
3. Stir in buttermilk and margarine until batter is blended but still lumpy.
4. Fold in currants or raisins.
5. Spoon batter into buttered and flour-dusted 8-inch round pan; do not smooth the surface.
6. Bake for 40-45 minutes or until a pick inserted in the center comes out clean. Cool bread in the pan for 10 minutes, then turn out on a wire rack. Serve warm, cooled, or sliced and toasted.
Food exchanges per 1-wedge serving: 1½ BREAD, 1 FAT
