Gloria's Corn Bread

Ingredients

1 cup unbleached flour, white
1 cup cornmeal, stone-ground
1/2 teaspoon salt
2 teaspoons baking powder, double-acting
1/2 cup wheat germ
1 cup milk, skim
2 tablespoons vegetable oil
3 packets artificial sweetener (equal to 2 tablespoons sugar)
1 egg
2 egg whites
1 cup corn, fresh or frozen

Directions:

I don't make this often because I could finish the whole pan myself -- not to mention the difficulty of keeping Brennan from eating too much of it! It's filled with fiber that helps slow down the rise of blood sugar. That's important to your child.

1. Preheat oven to 400ºF
2. Combine flour, cornmeal, salt, baking powder, and wheat germ.
3. Add remaining ingredients and stir well.
4. Pour into well-greased 8- by 8-inch pan.
5. Bake 20-25 minutes.
