1. Preheat oven to 350ºF.
2. Combine first 5 ingredients and stir well. Spoon about 3 tablespoons cheese filling in center of each blintz. Fold right and left sides over filling; then fold bottom and top over filling, forming a square.
3. Use a nonstick baking sheet. Place blintzes, seam side-down, on baking sheet; bake for 12 minutes or until thoroughly heated.
4. Top each serving of 2 blintzes with 1/3 cup Strawberry Sauce. Serve with Mock Sour Cream if desired and add appropriate exchanges.
