Bread Pudding

Ingredients

1/2 teaspoon vegetable oil
4 slices wheat bread, whole, cubed
1/4 cup golden raisins or currants
2 eggs
2 egg whites
1 (12-fluid ounce) can evaporated milk, skim
1/2 cup milk, skim
6 packets artificial sweetener (equal to 1/4 cup sugar)
1/2 teaspoon cinnamon, ground
2 teaspoons vanilla extract
1 teaspoon lemon zest or orange zest, finely grated

Directions:

1. Preheat oven to 325°F
2. Wipe a 1½-quart casserole with oil. Place bread in bottom of casserole. Scatter raisins on top.
3. Beat eggs and egg whites until foamy mix in remaining ingredients.
4. Pour egg mixture over bread.
5. Place casserole in a shallow pan. Pour hot water to depth of 1 inch around casserole.
6. Bake 1 hour, until a knife inserted halfway between center and outside edge comes out clean.
