Serves: 16 Print this Recipe2 cups whole wheat pastry flour 2 tablespoons sugar 1 tablespoon baking powder, double-acting 1/4 teaspoon cinnamon, ground 1/4 teaspoon nutmeg, ground 1 1/2 cups blueberries, fresh or frozen, thawed and drained 1 cup orange juice, unsweetened 1/4 cup margarine, diet, melted 1 egg 1 egg white 1 teaspoon orange zest, grated Organize all of your own recipes with the Cook'n Recipe Software. Make a well in the center of the mixture. 3. Combine orange juice, margarine, egg, egg white, and orange zest. Add to the dry ingredients. Stir just until moistened. 4. Fill muffin cups 2/3 full.
