Oat Bran Muffins

Ingredients

2 1/4 cups oat cereal (Oat Bran)
2 tablespoons brown sugar
1/4 cup nuts, chopped
1/4 cup golden raisins
1 tablespoon baking powder, double-acting
1/2 teaspoon salt
3/4 cup milk, skim
2 eggs, beaten
2 tablespoons honey
2 tablespoons vegetable oil

Directions:

This recipe comes from the Oat Bran cereal box and is very good. Oat Bran is one hot cereal both my boys will eat, and its soluble fiber helps lower cholesterol in the blood. It also has the highest protein content of any plant protein other than soybeans.
1. Preheat oven to 425ºF.
2. Combine cereal, brown sugar, nuts, raisins, baking powder, and salt.
3. Add milk, eggs, honey, and oil mix just until dry ingredients are moistened.
4. Fill muffin cups ¾ full. Bake 15-17 minutes or until golden brown.
