1 cup unbleached flour, white
1 cup whole wheat pastry flour
2 tablespoons sugar
1/2 teaspoon salt
2/3 cup milk, skim
1/3 cup lemon juice, fresh
1 teaspoon lemon zest, grated
1/4 cup vegetable oil
1 egg, medium
2 tablespoons golden raisins
1. Preheat oven to 400ºF.
2. Mix dry ingredients.
3. Combine remaining ingredients. Mix together with dry ingredients. Stir with fork. Do not beat. Batter will be lumpy.
4. Fill muffin cups 2/3 full. Bake 20-25 minutes.
