1/2 teaspoon peanut oil
6 1-ounce slices canadian bacon
6 eggs, poached
3 english muffins, split and toasted
Mock Hollandaise Sauce (Recipe Follows)
1. Wipe a large skillet with oil; place over medium heat until hot. Place Canadian bacon in skillet; cook 3 minutes on each side or until browned. Place on paper towels to drain.
2. Place 1 slice Canadian bacon and 1 poached egg on each muffin half; top each with 2 tablespoons Mock Hollandaise Sauce. Serve immediately.
