CRUST
1 (15-ounce) package refrigerated pie shells or Pastry for Two-Crust Pie recipe in Desserts, Cakes & Pies
FILLING
1 (28-ounce) jar mincemeat
1 1/2 cups chopped peeled apples
1/3 cup chopped nuts
2 teaspoons grated lemon peel, if desired
1 tablespoon fresh lemon juice
1. Prepare pie crust for two-crust pie using 9-inch pie pan.
2. Heat oven to 425°F. In large bowl, combine all filling ingredients; toss gently to mix. Spoon into crust-lined pan. Top with second crust; seal edges and flute. Cut slits in several places in top crust.
3. Bake at 425°F. for 35 to 45 minutes or until golden brown. Cover edge of crust with strips of foil after 15 to 20 minutes of baking to prevent excessive browning.
