Beat egg whites at high speed until soft peaks form. At the soft peak stage, egg whites will curl down when beaters are lifted. Then, gradually add sugar, 1 tablespoon at a time, beating continually until the sugar is completely dissolved.
Continue beating until stiff peaks form. At this stage, the egg whites remain upright when the beaters are lifted out of the mixture.
