*Before mixing the batter, add a flavoring such as:
1 tablespoon finely grated lemon or orange peel
1 to 2 teaspoons of flavored extract, such as vanilla, almond, orange or lemon.
1 teaspoon cinnamon, 1/2 teaspoon nutmeg and 1/2 teaspoon cloves
*Replace the water with the same amount of a flavorful liquid such as fruit juice, coffee or flavored soda. This will also change the texture.
*Replace part of the water with up to 1/4 cup of liqueur or liquor.
*Add a stir-in after the batter is mixed, such as:
2 to 4 ounces finely grated milk chocolate or semisweet chocolate
1 cup chopped nuts
1 cup coconut
2 tablespoons poppy seed
1/2 cup grated apple or thinly sliced peach
1/2 cup raisins or other chopped, dried fruit
