Spicy Curried Chicken with Couscous |

Serves: 4
Print this Recipe
4 small boneless skinless chicken breast halves (about 2 pounds)
3 teaspoons vegetable oil
1/4 teaspoon salt
1/8 teaspoon ground red pepper (cayenne)
1 cup chopped unpeeled green apples (about 1 medium)
1/2 cup chopped onions (about 1 medium)
1 clove garlic, finely chopped
2 teaspoons curry powder
2 teaspoons grated orange peel
1 cup chicken broth or water
1/4 cup raisins
1 tablespoon cornstarch
1/4 cup cold water
2 cups hot cooked couscous or rice
Remove excess fat from chicken; cut chicken into 1-inch pieces. Heat 2 teaspoons of the oil in 10-inch nonstick skillet until hot. Cook and stir chicken, salt and red pepper in oil over medium heat until chicken is done, about 5 minutes; remove chicken. Add remaining 1 teaspoon oil, the apple, onion, garlic, curry powder and orange peel; cook and stir until apple is tender, about 7 minutes. Stir in chicken broth and raisins. Heat to boiling, stirring constantly. Mix cornstarch and water; stir into chicken mixture. Boil and stir 1 minute. Serve over couscous.
