Curried Turkey Spaghetti |

Curry is a catchall term used to refer to many types of sauces, all of which have curry powder as a dominant ingredient. To vary this curry, try spinach or whole wheat pasta.
1/2 pound ground turkey or lean ground beef
1/2 cup chopped onions (about 1 medium)
1 clove garlic, finely chopped
3/4 cup chopped unpeeled tart eating apples (about 1 medium)
1/4 cup chopped fresh parsley
1 1/2 tablespoons curry powder
1/2 teaspoon ground cumin
1/8 teaspoon ground red pepper (cayenne)
1/4 cup unsweetened apple juice
1 (16-ounce) can whole tomatoes, undrained
6 ounces uncooked spaghetti
2 tablespoons chopped dry-roasted peanuts
Cook ground turkey, onion and garlic in 10-inch nonstick skillet over medium heat, stirring frequently, until turkey is no longer pink; drain. Stir in remaining ingredients except spaghetti and peanuts; break up tomatoes. Heat to boiling; reduce heat. Simmer uncovered about 5 minutes or until apple is tender, stirring occasionally. Cook spaghetti as directed on package; drain. Serve sauce over spaghetti. Sprinkle with peanuts.
