Kids won’t mind skipping the fast food if they can stay home and enjoy these nuggets.
Apricot Honey Sauce (see recipe)
4 boneless skinless chicken breast halves
1 tablespoon vegetable oil
1/2 cup Bisquick® Reduced Fat baking mix
1/2 cup cornflakes crumbs
3/4 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon pepper
Prepare Apricot Honey Sauce. Trim fat from chicken. Cut chicken into 1-inch pieces. Toss chicken and oil. Mix remaining ingredients in plastic bag. Shake about 5 pieces chicken at a time in bag until coated. Shake off excess crumbs. Arrange chicken pieces in single layer in microwavable pie plate, 10x1 1/2 inches. Cover with waxed paper and microwave on High 7 to 8 minutes, rotating dish 1/2 turn after 3 minutes, until chicken is no longer pink in center. Serve with sauce.
