4 slices fresh ginger root
1 scallion
2 tablespoons soy sauce
4 tablespoons sherry
1 tablespoon hoisin sauce
1 tablespoon chili sauce
1 tablespoon honey
1/2 teaspoon salt

1. Crush garlic and ginger root; cut scallion in 2-inch sections. Then combine with remaining ingredients.
2. Rub into pork and let stand 1 hour (see Pork chapter, "Roast Pork" and "Barbecued Pork Strips").
