10 pounds peaches, peeled and chopped
1/2 cup water
4-1/2 cups sugar
1-1/2 cups honey
In a large kettle, cook the peaches in water until soft. Press through a sieve or food mill. Measure 12 cups pulp; return to kettle. Add sugar and honey. Cook, stirring often, until mixture thickens, about 1-1/4 hours. Stir more frequently as it thickens to prevent sticking. Pour hot mixture into hot jars, leaving 1/4-in. headspace. Adjust caps. Process for 10 minutes in a boiling-water bath.
