Type Description

Button Ordinary white grocery-store mushrooms.

Mushrooms

Cremini Like button mushrooms but grown indoors and have light brown caps and richer flavor.

Enoki Long, skinny stems with rounded, snowy white thumbtack-sized heads. The wild form has orangy-brown, very shiny caps.

Oyster The cap color varies from white to gray or brown. The flavor is fairly robust and slightly peppery but becomes milder when cooked.

Porcini Large wild mushrooms with thick stems and reddish caps. Also called c├Ępes.

Portobello Large, meaty, brown-capped great for grilling.

Shiitake Flat brown cap with chewy texture and distinctive flavor that hints at onion. Readily available fresh and dried fibrous stems can be discarded or mushrooms used to flavor soup stalk.

Wild Mushrooms Intensely earthy flavors. Most varieties are quite expensive because availability is seasonal and depends on local foragers. Varieties you may find include chanterelles, porcini and morels.
