Virgin or extra-virgin olive oil has a strong, distinctive flavor and a color that ranges from golden to green. It is made from the first cold pressing of the olives.
Pure olive oil, made from subsequent pressings of olives, has a milder flavor and is much less expensive than virgin or extra-virgin olive oil.
Corn oil, safflower oil and sunflower oil are all golden colored and mild. They combine well with vinegar but add little flavor to the salad dressing.
Peanut oil has a slight peanut flavor and a golden color.
Walnut oil is fairly expensive and delicate. It has a good nutty flavor. Store it in the refrigerator or in a cool place to prevent it from becoming rancid.
Sesame oil, a favorite flavoring in Asian recipes, can be dark (made from toasted sesame seeds) or light (made from untoasted seeds). Use the dark oil sparingly its flavor is quite strong. Some "hot" sesame oils contain chiles.
