Rhodes Texas Rolls, thawed but still cold
1 tablespoon baking soda
Coarse salt, seeds, or spices
Thaw rolls until soft but not risen (about 2 hours at room temperature). FOR BAGELS: put both pointer finger through center of each roll and stretch to form a large hole. FOR PRETZELS: roll each roll into a 16-inch rope. Form in pretzel shape.
Place on large sprayed sheet. Cover with sprayed plastic wrap and let rise 30-45 minutes. In a large saucepan, bring 6 inches water with baking soda* to boil. Slip bagels or pretzels, a few at a time, into gently boiling water. Boil for 30 seconds on each side. Remove with slotted spoon; drain on cooling rack. If desired, sprinkle with coarse salt, seeds or spices.
Return to sprayed baking sheet. Bake immediately at 375°F for 15-20 minutes or until golden brown.
