This is a wonderful, light dish that is ready in about 20 minutes!
_ ounces uncooked vermicelli
_ tablespoons chopped fresh basil
_ tablespoons chopped fresh parsley
_ tablespoon grated lemon peel
___ cup lemon juice
_ tablespoons olive or vegetable oil
___ teaspoon coarsely ground pepper
_ medium tomato, chopped
___ cup grated Parmesan cheese
Cook and drain vermicelli as directed on package. Toss vermicelli and remaining ingredients except cheese. Sprinkle with cheese.
