This is a wonderful, light dish that is ready in about 20 minutes!
6 ounces uncooked vermicelli
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh parsley
1 tablespoon grated lemon peel
1/4 cup lemon juice
3 tablespoons olive or vegetable oil
1/2 teaspoon coarsely ground pepper
1 medium tomato, chopped
1/3 cup grated Parmesan cheese
Cook and drain vermicelli as directed on package. Toss vermicelli and remaining ingredients except cheese. Sprinkle with cheese.
