_ medium onion, chopped (1/2 cup)
___ cup shredded part-skim mozzarella cheese (2 ounces)
_ 1/2 cups skim milk
_ cup fat-free cholesterol-free egg substitute or 2 eggs plus 3 egg whites
___ cup all-purpose flour
___ teaspoon baking powder
___ teaspoon dried basil leaves
___ teaspoon dried oregano leaves
___ teaspoon salt
___ cup salsa
Heat oven to 350°. Spray pie plate, 9x1 1/4 inches, with nonstick cooking spray. Sprinkle onion and cheese in bottom of pie plate. Place remaining ingredients except salsa in blender. Cover and blend on medium-high speed about 30 seconds or until smooth. Pour into pie plate. Bake about 40 minutes or until knife inserted in center comes out clean. Let stand 5 minutes. Cut into wedges. Serve with salsa.
