1 broiler-fryer chicken 3 1/2 -pound, quartered
1 onion small, quartered
2 cloves garlic peeled
6 green onions sliced
1/2 teaspoon tarragon dried, crushed
2/3 cup beer
2/3 cup chicken broth (your own or canned)
1 tablespoon tomato paste
1/4 cup butter real
Freshly ground pepper to taste
Remove wing tips from chicken. Place chicken in shallow glass baking dish. Place all remaining ingredients in blender or food processor and purée. Pour mixture over chicken; marinate at room temperature for 2 hours or more, turning pieces occasionally. Pour off marinade and reserve. To assure doneness at joints of chicken, cover container with foil; bake in preheated 350° F oven for 20 minutes. Remove chicken to grill and cook over medium heat for approximately 45 minutes to 1 hour, brushing with marinade frequently and turning pieces to cook evenly.
