Hot sauce or salsa is a nice change from ketchup when serving these crisp, brown potatoes. For a real treat, sprinkle some sharp cheddar cheese over the potatoes after removing them from the oven, or top them with a dollop of sour cream.
2 pounds baking potatoes (about 5 medium), peeled and shredded
1/2 cup finely chopped onions
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons margarine or butter, melted
2 tablespoons vegetable oil
1. Heat oven to 400°.
2. Toss potatoes with onion, salt and pepper in large bowl. Pour margarine and oil into rectangular pan, 13 x 9 x 2 inches; add potato mixture. Bake 20 to 25 minutes, turning once, until golden brown.
