When the temperature is too hot to handle, try whipping up this cool salad. Even better, you can make it a day ahead of time. This is the perfect side for deli subs or anything hot off the grill.
1/2 cup sugar
1/3 cup water
1 teaspoon white pepper
1/2 teaspoon salt
1 1/2 cups cider vinegar
4 large cucumbers, peeled and thinly sliced
1/4 cup chopped fresh parsley
1. Mix sugar, water, white pepper and salt in medium saucepan. Heat mixture over medium-high heat to boiling and boil until sugar is dissolved; remove from heat and cool. Stir in vinegar.
2. Pour mixture over cucumber slices; sprinkle with parsley. Cover and refrigerate until ready to serve.
