Basil-Baked New Potatoes |

Serves: 6
Keep the skins on! The potato peel has lots of flavor and nutrients so don't remove them if you don't have to.

14 to 18 new potatoes, (2 1/4 pounds)
1/4 cup finely chopped green onions (3 medium)
2 tablespoons chopped fresh or 2 teaspoons dried basil leaves
2 tablespoons olive oil or vegetable oil

1. Heat oven to 350°. Spray rectangular pan, 13 x 9 x 2 inches, with nonstick cooking spray.
2. Place potatoes in pan. Sprinkle with onions and basil. Drizzle with oil; stir to coat.
3. Bake uncovered about 1 1/4 hours, stirring occasionally, until potato skins are crispy and potatoes are tender.
