Coat shrimp with 1/2 cup Italian dressing refrigerate for 30 minutes. Whisk remaining Italian dressing with peanut butter, soy sauce, honey, ginger and red pepper until smooth set aside. Sauté carrot, green onions and shrimp in sesame oil until shrimp is done, about 5 minutes. Toss pasta, peanut sauce and shrimp mixture together in a large serving bowl sprinkle with cilantro and peanuts, if desired.
TIP: Need to chop nuts in a hurry? Place them in a plastic zipping bag and roll with a rolling pin...so easy!
