1 Graham Cracker Crust (recipe follows)
1 package custard (.087 ounce) or 1 4-serving package sugar-free vanilla pudding mix
2 bananas firm, ripe (large or 3 medium)
If you use the vanilla pudding mix, you might try adding ½ teaspoon extra vanilla for more flavor.
1. Prepare the pie crust according to the recipe directions and chill.
2. Following the package directions, prepare the custard using artificial sweetener to replace the sugar, or prepare the sugar-free pudding mix.
3. Slice 1½ bananas into the bottom of the pie crust. Pour pudding or custard over the top. Slice remaining ½ banana and arrange in circles over top. Chill for 2-3 hours.
