Brennan's Rice Pudding

Ingredients

3 eggs
6 packets artificial sweetener (equal to 1/4 cup sugar)
2 teaspoons vanilla extract
1/4 teaspoon cinnamon, ground
1/4 teaspoon nutmeg, ground
2 cups evaporated milk (skim)
1 cup brown rice long-grain, or white converted rice, cooked
1/4 cup raisins

Directions:

1. Preheat oven to 325ºF.
2. Beat eggs. Mix in sweetener, vanilla, cinnamon, and nutmeg.
3. Add milk and mix thoroughly. Stir in rice and raisins. Pour into 2 -quart soufflé dish. Place in shallow pan and pour hot water around soufflé dish to a depth of 1 inch. Bake for approximately 45 minutes.
