Carrot and Raisin Salad

Ingredients

4 carrots (medium) grated
1/2 cup golden raisins
1/4 cup yogurt, nonfat
1/4 cup cottage cheese, low-fat
1 1/2 teaspoons lemon juice, fresh
1 packet artificial sweetener (Equal)
1/8 teaspoon cayenne pepper (optional)

Directions:

Some kids love this sort of dish, and some don't, but it's so nutritious that it's worth a try.

1. Combine carrots and raisins
2. Combine remaining ingredients in blender or food processor. Whirl until smooth. Stir into carrot mixture.
