Fresh Peach Pie |

Serves: 8 Print this Recipe2 tablespoons brown sugar 4 packets artificial sweetener (equal to 8 teaspoons sugar) 1 tablespoon cornstarch 1/2 lemon (juice of 1/2 lemon) 1 1/2 cups Large Peaches fresh, peeled and mashed 3 cups sliced peaches, fresh, peeled and sliced Whole Grain Pastry Shell (recipe follows) Organize all of your own recipes with the Cook'n Recipe Software. I've provided the exchanges for the filling in case you want to use a diferent pastry recipe. 1. Combine sugar, sweetener, and cornstarch in a medium saucepan with juice and mashed peaches. Bring to a boil, reduce hear, and simmer about 5 minutes, until mixture is thickened, stirring constantly. Set aside to cool. 2. Place sliced peaches in pastry shell. Spoon cooled peach mixture over peaches and chill thoroughly.
