Cheddar Pear Pie

Serves: 6

   1/2 cup flour
   1/2 cup brown sugar packed
   1/2 cup cheddar cheese shredded (2 oz.)
   1/4 cup butter cold or margarine, cut in pieces
   6 cups pears sliced, peeled ripe
   1 tablespoon lemon juice
   1/2 cup brown sugar packed
   3 tablespoons cornstarch
   1/2 teaspoon ginger ground
   1 frozen pie crust unbaked 9-inch pastry shell


In a small bowl, mix flour, 1/2 cup brown sugar, and cheese. With a pastry blender or two knives, cut in butter until mixture resembles coarse crumbs; set aside.

In a large bowl, toss pears with lemon juice. In a small bowl, stir 1/2 cup brown sugar, cornstarch, and ginger until well mixed. Sprinkle over pears and toss to coat. Spoon into pastry shell. Sprinkle with crumb topping.

Bake in preheated 400° oven 45 minutes or until top is golden brown. Cover loosely with foil during baking if browning too quickly. Cool on a wire rack.
