3 eggs white large, at room temperature
1/2 teaspoon vanilla extract
1/4 teaspoon cream of tartar
6 tablespoons sugar
In a small mixer bowl at high speed, beat egg whites, vanilla, and cream of tartar until soft peaks form when beaters are raised. Gradually beat in sugar, 1 tablespoon at a time. Beat at high speed until sugar is dissolved and stiff peaks form when beaters are raised. Use as directed in pie recipe.
