1 broiler-fryer chicken cut up
1/3 cup butter real
1 teaspoon salt
1/4 teaspoon black pepper freshly ground
1/3 cup instant potato flakes
Heat oven to 375° F. Pat chicken pieces dry with paper towels. Melt butter in 9 x 13-inch shallow baking pan. Dip chicken pieces in melted butter. Turn skin side up; sprinkle with salt, pepper, and potato flakes. Bake uncovered about 1 hour or until chicken is tender. Do not turn during cooking time.
Note: For a special treat use boned chicken breasts. Do not remove skin. Unbelievably simple and scrumptious.
