3/4 cup plus 2 tablespoons buttermilk
2 tablespoons margarine or butter, softened
2 tablespoons honey
2 1/2 cups bread flour
1 teaspoon salt
1/4 teaspoon baking soda
1 teaspoon bread machine or quick active dry yeast

Make 1 Pound Recipe with bread machines that use at least 2 cups flour, or make 1 1/2 Pound Recipe with bread machines that use at least 3 cups flour.
Measure carefully, placing all ingredients in bread machine pan in the order recommended by the manufacturer.
Select Basic/White cycle. Use Medium or Light crust color. Do not use delay cycles. Remove baked bread from pan, and cool on wire rack.

SUCCESS TIP: If your bread machine has a 2-pound vertical pan, the loaf will be short but still will have good texture and flavor. If your bread machine has a horizontal pan, however, there isn't enough dough to make a good loaf of baked bread.
SUCCESS TIP: Surprised to see baking soda in a yeast bread? Baking soda works beautifully in this recipe because there are two mildly acidic ingredients-buttermilk and honey. The results give you a pleasant-tasting bread.
SANDWICH BOARD: Here's a tasty Olive Walnut Spread to serve with this bread. Mix a 3-ounce package of softened cream cheese with 2 tablespoons milk until it is smooth and creamy. Stir in ½ cup finely chopped walnuts and ¼ cup finely chopped pimiento-stuffed olives. This makes about 1 cup of spread, so cover and refrigerate any leftovers.
