Crunchy with pecans, gooey with brown sugar and pineapple, this is just right for a holiday celebration meal.
2 medium sweet potatoes or yams, peeled and cut into 1/2 inch slices (about 2 cups)
1 can (8-ounce) crushed pineapple in juice, undrained
1 tablespoon packed brown sugar
2 tablespoons chopped pecans
1 tablespoon chopped crystallized ginger
1 teaspoon butter or margarine, softened
1. Heat oven to 375°. Spray 1-quart casserole with nonstick cooking spray.
2. Layer potatoes and crushed pineapple in casserole. Sprinkle brown sugar, pecans and crystallized ginger over top; dot with butter. Cover and bake about 45 minutes or until potatoes are tender.
