Buttercup Squash with Apples

Serves: 2

Bake: 40 min

Sprinkle toasted sunflower seeds or chopped toasted pecans over the cooked squash for a crunchy treat!


   1 buttercup or other small winter squash, cut in half, seeds and fibers removed (1 pound)
   1/2 cup chopped tart apples
   2 teaspoons packed brown sugar
   2 teaspoons butter or margarine, softened
   1/2 teaspoon lemon juice
   Dash of ground nutmeg

1. Heat oven to 400°. Place squash halves cut sides up in ungreased rectangular baking dish, 11 X 7 X 1 1/2 inches.
2. Mix remaining ingredients; spoon into squash. Cover and bake 30 to 40 minutes or until squash in tender.
