Vegetable-Filled Manicotti |

Prep Time: 30 minutes (ready in 1 hour 25 minutes) - Yield: 6 servings
1 (26-ounce) jar spaghetti sauce
1 cup water
1 (15-ounce) container light ricotta cheese
1/4 cup grated Parmesan cheese
3/4 cup shredded carrots
1/2 cup finely chopped red bell peppers
1 teaspoon cracked black pepper
1 egg
12 uncooked manicotti shells
1. Heat oven to 350°F. In medium bowl, combine spaghetti sauce and water; mix well. Spread 1 cup of sauce mixture in bottom of ungreased 13 3 9-inch (3-quart) baking dish.
2. In large bowl, combine ricotta cheese, Parmesan cheese, carrot, bell pepper, pepper and egg; blend well. Stuff cheese mixture evenly into uncooked manicotti; arrange over sauce in baking dish. Top with remaining sauce mixture. Cover tightly with foil.
3. Bake at 350°F. for 45 to 55 minutes or until manicotti are tender and sauce is bubbly.
