Prep Time: 15 minutes - Yield: 4 quesadillas
8 (9 or 10-inch) flour tortillas
8 ounces (2 cups) shredded cheddar or Monterey Jack cheese
1/2 cup salsa
1/2 cup sliced ripe olives, if desired
1 medium avocado, sliced, if desired
1. Heat oven to 350°F. Place 4 tortillas on ungreased large cookie sheet. Top each with cheese, salsa, olives and avocado. Top each with second tortilla.
2. Bake at 350°F. for 5 minutes or until cheese is melted.
