Mediterranean Chicken

Serves: 4

3 cups chicken broth, no salt
1 cup orzo pasta
2 teaspoons olive oil
1/2 cup onion
1 clove garlic
2 chicken breasts
2 tablespoons sun dried tomatos
2 ounces black olives, sliced
2 tablespoons balsamic vinegar
1/4 cup Parmesan cheese
1/3 cup fresh basil
1/2 teaspoon pepper
1/4 cup feta cheese


1. Bring chicken broth to boil, add Orzo and cook 10-12 minutes. Remove and let stand.
2. Cut chicken into approximately 1 inch pieces.
3. Heat olive oil, onions and garlic in a pan. Add chicken and cook until juices run clear.
4. Add balsamic vinegar, parmesan cheese, tomatoes and black olives.
5. Heat another 2-3 minutes. Top with feta cheese and serve.
